Between unexpected delays in running errands, and heat and humidity that, yet again, is through the roof, my Surviving Cancer’s Recipes of the Week meal planning has inadvertently been placed on the back-burner in the past few weeks. When my husband and I are tired and stressed, the last thing we want to do is eat, so cooking from scratch is not high on our to-do list. Instead, we end up going out to eat for a quick bite, and while it satisfies our need for food, our digestive system is usually not the happiest for it.

Because of so many unexpected changes and delay’s in my recipes of the week post, I almost considered giving up on this weekly post altogether, but it seems this weekly post may have a bit more of a following than I had expected.

Since I am attempting to get back on track, there are a few recipes in these weeks list that are carryovers from Surviving Cancer’s Recipes of the Week post on August 20th, 2018, in addition to some new picks. We’ve been on a roll so far with keeper recipes, so it should be interesting to see how these weeks meals turn out.

This recipe is actually on the list for tonight’s meal and is one of the carryovers from my August 20th blog post. My husband is always skeptical when I choose recipes with lemon in them, as he knows I am not particularly a fan of it. When I was going through Cancer treatments I used lemon often in my water. Chemotherapy treatments have a way of messing with your taste buds, and plain water was less than appetizing to drink. The lemon helped, by adding a subtle flavor to the water, which made it easier to get down and ensure I didn’t get dehydrated.

I was intrigued by this recipe as one of our favorite ingredients, Garlic is also included. We LOVE garlic! So, it should be interesting to see how this one turns out. Recipe courtesy of:

One Pot Taco Spaghetti: Pot Taco Spaghetti

I have been trying my best to limit the use of pasta in our nightly meals, but I came across this one a few weeks ago when I was searching for ground turkey/beef recipes. My husband saw it, and made the comment that it looked interesting, so added it to my “to try” board and printed it out. It looks similar to the Low Carb Taco Cabbage Skillet from my August 20th post, but of course with pasta instead of the cabbage as the pasta replacement. Hopefully, it’s as good as it looks. If you have been following my weekly recipe posts, we actually tried this recipe back in the Surviving Cancer’s Recipes of the week for the week of August 13th. My husband was feeling a bit under the weather, from too much time outdoors in the heat and humidity, the last time I made this recipe, so I was on my own in the kitchen. I had purchased what I thought was a medium spaghetti squash, which ended up providing a serving much larger than I was expecting. I, of course, was a bit heavy-handed with the garlic. Can’t even remember how much I put in it. This time we got a much smaller Spaghetti Squash. Hopefully, it comes out as good as it did last time. Recipe Courtesy of:

We have started back up with our Fall bowling league which meets every Friday night. Due to this scheduling change, we won’t be doing recipes on Friday’s and instead, we’ll be opting for quick eats, like hot dogs on the grill, Chicken Cesar Wraps, or something else that is quick to make and won’t result in digestive distress.
