We had some unexpected changes to last week’s recipe of the week list, so there were a few carryovers to this week. Hence, my delay in getting this post out.
It’s going to be another busy week for us, errands to run, and leftovers to use in the fridge, so there is a good chance you may see some of these on next week’s list.
Anyways, in no particular order, here are the chosen Pinterest recipes of the week.

This is a carryover from last week. You may have seen my IG posts last night of the outcome. It’s quite tasty and easy to modify to your specific taste. I swap out the green pepper with red, due dietary
issues, and we use ground turkey instead of beef. I happened to use Hormel Natural Choice Uncured Pepperoni, but you can use whatever you like.

Slow Cooker Garlic Parmesan Chicken – https://www.pinterest.com/pin/496873771383683890/
This recipe has become one of our go-to alternatives for an alternative to the traditional meat and potatoes. I choose to use boneless chicken thighs, less of a pain, instead of the bone-in thighs that the recipe calls for. We easily get a few meals out of this one each week. Salmon Burgers with Avocado Garlic Sauce – https://www.pinterest.com/pin/496873771383493191/
This one has been on repeat quite frequently in our home. I use 4 cans of Bumble Bee Skinless Boneless salmon in water, instead of trying to fight with fresh, no deboning required. My avocado salsa ends up a little lumpier than what you may see in the recipe, as I don’t have a food processor, so I mix the sauce by hand. Still comes out quite tasty in my opinion. The recipe calls for the burgers and sauce to be the main dish, but you can put these on hamburger rolls if you so choose. Recipe courtesy of: http://therealfoodrds.com
Jalapeno Popper Chicken Casserole – https://www.pinterest.com/pin/496873771382737772/
This was a full on experiment a few week’s ago, and it turned out quite tasty. I found that since I am only cooking for two people, I don’t use anywhere near as many jalapenos as the recipe calls for. We also were able to split this into two separate meals by using two casserole dishes. You may need to do some trial and error to figure out the best ratios for your family.
